Onsen Tamago, or hot spring egg, is a simple, but satisfying dish made by carefully constricting the cooking of the egg for a warm, custardy yolk.

Slowly braised beef tripe, shank, and tendon are cooked in a spicy Mala sauce of beef tallow and spices until incredibly tender for the “Holy Cow” appetizer.
